Devorah asks about trans Jews, and I realize I have no good answer.
Different communities rule differently. Some Orthodox poskim hold that halakhic sex cannot change. Others permit gender-affirming surgery and recognize the result. Reform and Reconstructionist movements generally recognize gender identity.
A trans woman might write G:F in one community and be correct, and write G:F in another community and be contested.
We are back to the problem we have with all categories: the specification provides vocabulary, communities provide interpretation. But with gender, the interpretive differences are especially charged.
