Subject: Context tokens for gentile populations

I need to understand the use case before I can build anything.
If my software encounters a gentile context, what am I supposed to do with it? Are their kashrut standards different from ours? Obviously yes, but in what way? Do I need to track Catholic kashrut separately from Protestant kashrut?
I am not trying to be difficult. I genuinely do not know how their systems work.
