Subject: Is gender Jewish?
Let me sharpen the question.
This specification encodes Jewish self-attestation. K+ means something about kashrut practice. Sh+ means something about Shabbat observance. These are Jewish categories.
What would G:M mean? That one is male? That is not a Jewish statement. Anyone can be male.
That one experiences male Jewish life? Counting for a minyan, wearing tefillin, reading from the Torah? But these depend on community. A Reform man and an Orthodox man have different obligations.
The G code does not describe something Jewish. It describes something that affects how Jewish life is experienced. These are different.
