Subject: Can certificates be revoked?

But our certificates do not say "this meat is kosher." They say "this subject completed this procedure."
If I revoke the certificate, am I saying the procedure did not happen? It did happen. The signature was valid at the time. The subject appeared, completed the steps, received the certificate.
What exactly am I un-doing?
