Perhaps we should define an epoch without defining a conversion.

We could say: the epoch is 1 Tishrei 5001. This is a date in our calendar only. It does not reference any external calendar. Implementations count days from there.

If someone wants to know what Gregorian date that corresponds to, that is their problem. We have defined our reference point in our terms.
